Chocolate cake recipe

This cake is simply a cake batter flavoured with chocolate sauce.

Chocolate sauce:
1/2 cup cocoa powder
125g butter
3/4 cup milk
1/2 cup sugar

Cake batter:
4 eggs
3/4 cup cake flour
1/4 cup sugar
2 tbsp oil
1 1/2 tsp baking powder

Make chocolate sauce: Melt butter, milk and sugar in a sauce pan, add cocoa powder and stir continously. Stir until all the ingredients have dissolved and the mixture is liquid without any lumps. Leave to cool.
Make cake batter: Separate egg whites and yolks. Beat egg whites until soft peaks, then add sugar and combine beating until stiff peaks. Beat yolks until pale yellow, and then add the oil and continue beating until well-mixed. Sift together flour and baking powder. Fold in the egg yolks and flour into the egg white mixture. Fold until the batter is paste-like and runny, but be careful not to lose the air in the egg whites. Finally, add the chocolate sauce to the cake batter and continue folding until well-mixed. Pour the mixture into a baking pan (You can use a spoon to swirl the chocolate sauce to make it look nice). Bake the cake in an oven preheated at 350F for about 45 minutes.

Durian puff recipe

Puff:
1 cup water
3/4 stick butter, cut into pieces
1 tbsp sugar
pinch of salt
1 cup flour
4 eggs
1 teaspoon baking powder
1 teaspoon vanilla powder

Filling:
200ml whipping cream
1 cup durian pulp
1 tbsp sugar


Make the puff: pour water into a saucepan. Add in butter, sugar and salt and bring it to a boil. Reduce to low heat. Take the pan off the stove and add in flour, stirring constantly. Heat the pan and stir until a thin white layer can be seen on the bottom of the pan. Transfer the mixture into a bowl and allow to cool. Mix in eggs one at a time until they are incorporated. Add baking powder and vanilla at the last egg. Preheat oven to 350 F. Roll 1 teaspoon of choux paste into a ball and place onto baking paper, each 1 inch apart. Bake for about 35 min.
For the filling: whip cream until soft peaks. Add durian pulp and sugar and mix well. Put filling into the fridge for a while to set slightly, before filling the puff (You can also use a pastry bag to fill the puff). Leave it in the fridge to chill before serving.

Chili Dog recipe

Ingredients for the chili dog sauce:

1/2 pound of minced beef
1 onion, finely choped
1/2 cup ketchup
1/4 BBQ sauce
2 tablespoons brown sugar
1 tablespoon chili paste or powder (depends on taste)
1 tablespoon water

Cook minced beef and onions. Add all the other ingedients and mix together. Simmer on low heat and stir continously, until desired consistency. Grill hotdogs and heat up buns. Assemble and serve.

BBQ cheese prawns

Here's a dish for all who like prawns and cheese.

Prawns, shells removed
Chopped parsley
Chopped garlic
Lemon juice (of 1 lemon)
Olive oil
Cheese slices

To make the marinade, mix together the parsley, garlic, lemon juice and drizzle olive oil. Pour the marinade over the prawns and leave to stand for a while. Place the prawns on aluminium foil and cover the prawns with cheese slices. Wrap the aluminium foil and place on the grill.

BBQ hamburgers

Something simple and interesting that I tried, hamburgers on the grill (makes about 10 small burgers).

500g ground beef, thawed
1 onion, finely sliced into cubes
3 tbsp pepper
2 tbsp corn starch
dash of herbs or spices
pinch of salt

Lettuce, cut into strips
Tomatoes, sliced
Cheese slices
Burger buns

Mix well the ground beef, onion cubes, pepper, corn starch, herbs or spices and salt. Roll the beef mixture into patty-size balls. When ready to barbeque, press the balls into hamburger patties and then grill. Depending on the heat, flip the patty after about 15 minutes. Grill the other side. Continue grilling until both sides are almost done. In the meantime, toast the buns on the grill. Place a slice of cheese on the top of the patty. When the cheese melts, remove the hamburger patty and place on the bun. Assemble the burger with lettuce and tomato slices, and serve.

Honey-Apple cake

Recipe for a delicious honey-apple cake.

Ingredients:

1 cup cake flour
1/2 tsp baking powder
3/4 cup sugar
5 medium-size eggs
1/2 cup vegetable oil
1/2 cup honey
2 apples
1 tsp ground cinnamon
1 tbsp lemon juice

Cut the apples into thin slices. Spread cinnamon and lemon juice over the apple slices and store in fridge. Separate egg whites and yolks and beat egg whites until soft peaks form. Then add 1/2 cup sugar into egg whites and continue beating until it forms stiff peaks. Take egg yolks and beat until bubbles form, then add the rest of the sugar and continue beating to mix the yolks and sugar. Then add the vegetable oil to the yolk/sugar mixture and beat until evenly mixed. Whisk the yolk/oil/ sugar mixture into the beaten egg whites. Sieve together, flour and baking powder, and fold into the egg-foam mixture. Add the honey into the batter and gently whisk to mix. Lastly, add in the apple slices and gently fold the batter. Pour the batter into a lightly-floured baking pan. Preheat the oven to 350 degree farenheit. Bake the cake for about 45 minutes, and insert a toothpick to test for doneness.
